Pumpkin Chocolate Chip Cookies

I love pumpkin! I usually don't bake too much with it during the summer, but there is a hint of fall in the air....So I pulled out my favorite pumpkin recipe and whipped up a batch with the kids. I didn't take pictures because they inhaled them :) Maybe next time!

Pumpkin Chocolate Chip Cookies

1 1/2 Cups Pumpkin
1/2 Cup Butter
1 Cup Sugar
1 tsp vanilla
1 egg

I beat these together and then I add the dry ingredients

2 Cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp. salt

Mix together well and add your chocolate chips!

Bake @ 375 for 12 to 14 minutes.
Perfection itself!

A little off subject I know, but I hope you like them.

Sounds yummy! You know a quick and easy way to make these is to use a spice cake mix, can of pumpkin & choco chips & they are delicious too! Thanks for sharing the yumminess! :)

Yummy! My favorite cookie in all the world. What do you do with the leftover pumpkin? I always have extra. Have any good pumpkin bread recipes or anything? :)

I think you should have a special feature every Friday. A recipe of the week to try on the weekend. Just a thought.
